4 cups of coconut milk
2 tablespoons of yellow curry paste
2 tablespoons of massaman curry paste
2 makrut Thai lime leaves
1 tablespoon of fish sauce

½ a cup of Chinese pickled mustard greens
½ a cup of shallots
2 scallions

2 pounds of chicken leg quarters
8 cups of water
¾ of a cup of galangal
2 stalks of lemongrass
2 to 4 makrut lime leaves
1 whole bulb of garlic
1 large shallot
